January Afternoon Recipe Group

Thanks to April for some yummy potato soup that was perfect for a snowy afternoon. We also has some soup toppers there. Experiment with pitas, pumpkin seeds, sesame seeds, wonton wrappers, home made croutons, or tortillas. Just use a little oil, seasoning, and a fry pan or oven on broil. It makes for fun presentation and a little crunch on top.

Potato Soup!

2 Tbsp. butter

1 lb. bratwurst (or hot dog or kielbasa)

1 onion

½ cup sliced celery (optional)

3 cups cubed potatoes or more (white or red potatoes work best)

3 cups chicken broth

1 can cream of mushroom/celery soup

½ cup sour cream

1 cup milk

1 Tbsp. parsley

1 pkg. frozen peas

Pepper to taste

Brown hot dogs and onion in butter, and boil potatoes first; then combine it all in a HUGE pot and heat it through!
